Skinny Recipe: Sweet and Spicy Snack Mix

Watching sports is one of America’s favorite past times. In the coming weeks and months, we have the Super Bowl, March Madness, NHL season and baseball season. This is probably one of my favorite times because there is always a different game every night. But if you are like me, you graze during those games. How about instead of going for the chips and dip this year, we opt for this flavorful Sweet and Spicy Snack Mix instead.

It’s the season of witches and goblins, and candy galore. Unfortunately, there is no potion or spell to shrink your waistline after this sugary holiday, but that doesn’t mean you can’t participate in the festivities. Follow these  tips and tricks, and you’ll survive Halloween without gaining weight.

Lastly, a Halloween party is not complete without Popcorn Witches Wands. Add these to your menu, and they are guaranteed to fly off the table.

Skinny Recipe: Southwest Shrimp Dip

There’s nothing like a zesty dip filled with shrimp for enjoying on your favorite cracker. Like shrimp salad, but thicker and heartier, this dip showcases the fresh taste of seafood. Pair with baked corn tortilla chips and you have a great gluten-free snack option.

Southwest Shrimp Dip

Makes about 4 cups

Ingredients

1 pound boiled shrimp, peeled and coarsely chopped
2 cups reduced fat sour cream
2 tablespoons mayonnaise (regular or reduced fat)
1 to 2 teaspoons chile powder (to taste)
1/2 teaspoon ground cumin
2 tablespoons finely chopped red Spanish onion (or other sweet salad onion)
2 tablespoons fresh lime juice
1/4 cup chopped cilantro leaves
1 teaspoon brown sugar or one packet of your favorite no-calorie sweetener
Salt to taste
Extra cilantro leaves for garnish

Directions

Stir together all ingredients except garnish. Cover and chill for at least 2 hours. Garnish and serve with fat-free chips for dipping.

Skinny Recipe: Southwest Citrus Salsa

January is the ultimate month for citrus. With the Super Bowl right around the corner, this quick and healthy salsa is a perfect, tangy crowd-pleaser. Pair with baked tortilla chips to keep it healthy.

 

Southwest Citrus Salsa

Makes 5 servings

Ingredients

4 roma tomatoes
2 large oranges, peeled and diced
1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, seeded and minced
2 tablespoons fresh lime juice
1/4 cup fresh orange juice
2 tablespoons SPLENDA® Granulated or the equivalent of your favorite sweetener
1 tablespoon chopped fresh cilantro
1 teaspoon salt

Directions

Bring small saucepan of water to a boil. Blanch tomatoes for 30 seconds, and then rinse with cold water. Peel and chop tomatoes.

Place all ingredients in a large bowl and stir until mixed thoroughly. Allow to stand at room temperature for one hour. Mix and serve. Refrigerate any unused salsa.
