Sugar Free Sweet Potato Pie

Half the calories and a third the fat of a traditional sweet potato pie, without losing flavor. You won’t miss the calories and your family will thank you!

Makes two 9-inch pies, 16 servings


2-1/2 cups mashed cooked sweet potatoes (about 1-1/2 pounds raw sweet potatoes)
2 eggs
7-1/4 tsp. Equal Measure or 24 packets Equal
1 Tbs. margarine, softened
2 tsp. ground cinnamon
3/4 tsp. ground nutmeg
1/4 tsp. ground mace
1/2 tsp. salt
2 tsp. vanilla extract
1 12-ounce can evaporated milk or evaporated skim milk
2 unbaked 9-inch pie shells


Preheat oven to 350 degrees.

In large bowl of an electric mixer, combine the sweet potatoes, eggs, Equal, margarine, cinnamon, nutmeg, mace, salt and vanilla. Beat on medium speed until smooth, scraping sides of bowl several times. Slowly add milk. Beat until well-mixed. Pour into unbaked pie shells and bake 50 to 60 minutes or until knife inserted in center comes out clean. Allow to cool before serving. Top with fat free/sugar free whipped topping for an added treat.
