Skinny Recipe: Tropical Milk Shake

The weather is only getting getting hotter and so the drinks in my house are only getting colder. This is my go-to recipe when I need a vacation, but can’t get away for more than a few minutes. It’s fast and easy so I can hit the tropics in no time and daydream about sand and sun until it’s a reality!

Take advantage of fruits in season, which are usually cheaper and taste better.  Bring them home, cut them up and freeze into single servings for even easier shakes.

Makes a single serving


1/2 cup lite coconut milk
1/4 cup low-fat (1 percent) cow’s milk
3/4 cup diced papaya or 1 cup diced mango
2 packets Monk Fruit In The Raw sugar substitute
1/2 cup coarsely crushed ice
1 Lime wedge, optional, for garnish


Place all ingredients in a blender. Whirl on high speed until smooth and frothy. Pour the milk shake into a tall glass. Serve immediately.

Change up the flavor profile by using a cup of sliced bananas, pineapple chunks or any other fruit you like!
