Skinny Recipe: Watermelon Agua Fresca

Tomorrow is National Watermelon Day! Celebrate by the pool with this ice cold drink and don’t forget to bring the sunscreen!
Yields 2 servings
2 cups chopped watermelon
1/2 cup crushed ice
1/2 cup cold water
2 teaspoons fresh lime juice
4 packets Monk Fruit In The Raw
2 mint sprigs for garnish, optional
Place everything but the mint in the blender. Cover and whirl on low to liquefy, then on high until smooth and frothy. Serve immediately over ice. Garnish with a mint sprig, if desired.
